Luscious Lemon Pie


 I feel like a completely different person must be writing this blog. I just cooked my second pie. Ever.

Who am I?

I was poking around on one of my favourite food blogs, Use Real Butter, knowing Jen would have a use for my Meyer lemons. Did she ever deliver. She had a recipe for a lemon tart in which she used half Meyer and half regular lemon. Basically, this recipe comes down to a lot of stirring. I probably spent 25 minutes stirring what would become delicious lemon curd (Jen surmised that it took her about twenty minutes of stirring because she had doubled the recipe. I think it just takes a really long time no matter what). It only involves two measurements: sugar and butter. Everything else is like 2 lemons, 6 eggs. Hard stuff to screw up.

What made this even better was that when I turned from the stove after all that stirring, Chris had done all the dishes from dinner and the pie!

Once again, I wimped out on making pie crust. I’ve got to be honest, though; I’m not that motivated. I'm sure I'll try it eventually, but if I can get pie from just stirring some stuff, why make my life harder?

Anyway, this pie is great. Chris took one bite, moaned, and asked, "What idiot came up with the expression, 'when life gives you lemons, make lemonade'?" So there you go. Make this Pie. Just turn on the TV or radio, and start stirring. Here’s the link to the original recipe, which I followed verbatim.
