Sometimes using up leftovers is a bit of a chore. This was not one of those times.
I had a bunch of fruit I needed to use and some frozen puff pastry. I decided to make something resembling pie. I have no pie pans, so I opted for galettes (read: pies with no pans). They were soooooo delicious. Like the delicious-est. I'll give you the ingredients and some vague quantities, but I didn't measure anything and I don't think you need to either. This is pretty hard to screw up. Just take any fruit, some sugar and some puff pastry and you've got the makings of a masterpiece.
Idiot-proof Galette
Ingredients:
Some rhubarb, sliced
Some strawberries, sliced
A bunch of sugar
A bit of cornstarch
A little cinnamon
OR
Some blueberries
Some peaches, sliced
A bunch of sugar
A bit of cornstarch
A little cinnamon
A sheet of frozen puff pastry
1 egg
A splash of water
Instructions:
1. Stir ingredients together in a bowl.
2. Dump in the middle of the puff pastry and fold the edges in.
3. Brush the edges with egg wash (egg beaten with water) and bake at 375°F for 30 minutes or until golden brown.
4. Serve with whipped cream.
5. Die of happiness.
Pairs nicely with a nice cold glass of skim milk.
